How do you cook a whole sand dab?

  1. Move the oven rack to a position 3 to 4 inches below the broiler. Preheat the oven on broil.
  2. Pat the fish dry and place it on a prepared baking sheet, skin side down.
  3. Place the baking sheet in the oven and cook for about 4 minutes, or until the fish flakes easily.

Are sand dabs good eating?

Most watchdog groups list sanddabs as a “good” choice. From an eating standpoint, dabs are basically yummy fish morsels. Most are too small to properly fillet, so cooks generally pan-dress them by scaling and gutting, then taking off their heads; some cooks (myself included) remove the fins, too.
